RV Vacation Idea: National Park Week

April 16 - 24 is National Park Week

We're taking a quick break from our series on National Parks to highlight National Park Week.  Here's an opportunity to show your kids the beauty and wonder of our National Parks system, as well as provide a learning environment all wrapped up in a whole lot of fun.

Our National Parks give us a special gift during this week as all entrance fees are waived for the week! 

There are 394 national parks in the country, so no matter where you want to go, there will surely be a park of interest.  Please visit the National Park Service website to find a park or historic site to visit.  El Monte RV has locations nationwide, so please visit our locations map to find a rental location.  Enjoy National Park Week!
RV Recipe of the Month
 
Pork Loin Roast with Glaze
 
Ingredients:
1   2 1/2 lb pork loin roast
2 cups mango nectar
1/2 cup light brown sugar
2 1/2 tablespoons cornstarch
2 teaspoons dry mustard
1 1/2 tablespoons white vinegar 
1 clove garlic, cut into slivers
Salt and pepper to taste
  
Glaze:
~ Combine mango nectar, brown sugar, cornstarch, dry mustard and vinegar in a saucepan.
~ Cook over medium heat, stirring constantly until mixture is thickened and bubbly.
~ Reserve 2/3 cup of the glaze for sauce to serve over cooked pork.  Other portion of glaze will be used while baking.

Directions:
~ Insert garlic into pork loin.
~ With a knife; score fat on roast in a diamond pattern.  
~ Season roast with salt and pepper to taste.
~ Place roast, fat side up in a 13 x 9 baking pan or shallow roasting pan. 
~ Bake at 325 degrees for about 1 hour; then pour glaze over roast and continue baking roast and basting occasionally until meat thermometer registers 160 degrees.
~ Remove roast to a serving platter.
~ Let roast sit for 10 to 15 minutes.

~ Take out about 1/2 cup of the drippings from baking dish and combine with the 2/3 cup reserved sauce.

~ Add as much of the dripping to taste or until the sauce is warm.

~ Serve sauce over roast.
