Chicken and Sausage Stew  Chicken and Sausage Stew

 

Ingredients:

1 lb. sausage, sliced diagonally

4 boneless, skinless chicken breasts, cooked and cubed

6 Tbsp oil

3 celery stalks, chopped diagonally

2 carrots, chopped diagonally

2 onions, chopped

1 green pepper, chopped

2 cloves garlic, minced

2 Tbsp flour

1  28-oz can diced tomatoes, drained

1 tsp dried thyme

1 tsp red pepper flakes

1/2 Tbsp black pepper

1/2 Tbsp salt

3  14.5 oz cans chicken stock

2 cups long grain white rice, cooked

 

Directions:

~  Heat 2 Tbsp oil over medium-high heat in a large Dutch oven.  Add chicken, brown, remove and set aside.

~  Add 2 Tbsp oil to saute onion, celery, carrots, bell pepper and garlic.

~  Stir in flour and add tomatoes, pepper flakes, thyme, salt and pepper.

~  Add chicken stock.  Bring to a boil over medium-high heat.

~  Add chicken and rice, lower heat and cover.  Simmer until liquid is mostly absorbed.  Add sausage.
