RV Vacation Idea: Saint Croix Island National Historic Site - Maine


Saint Croix Island Int'l Historic Site

Just a short drive from this month's campground of the month is Saint Croix Island International Historic Site.

The island is the site of the first French attempt to colonize North America in 1604 and is the site of the beginning of a European presence in North America. These early French explorers endured a brutal winter in 1604 - 1605. Trading between these men and the Passamaquoddy native Americans allowed them to survive and continue their explorations.

You'll want to take the self-guided interpretive trail to learn about these brave explorers.

Monty's Munchies

Crusty Crab Cakes

Ingredients:

2 cans (6.5 oz) crab meat (drained)
1 cup cracker crumbs (finely crushed)

2 Tbsp. Worchestershire sauce

1 Tbsp. dried onion (minced or chopped)
1 tsp. ground mustard
1/2 tsp. celery seed
1/4 tsp. pepper
1 egg (beaten)
3 to 4 Tbsp. milk (just enough to hold it together)

Directions:

~ Flake crab into a bowl. Remove any shell bits.

~ Add all ingredients and mix well.

~ Shape into patties.

~ Heat cooking oil and fry crab cakes until golden brown and crusty (about 10 minutes on each side).

~ Serve with Zesty Mustard Sauce (recipe below) or hot red sauce.

Serves 4 to 6.

Zesty Mustard Sauce:

1 1/2 Tbsp. flour

1 cup water

1 tsp. instant chicken bouillon

1/2 to 1 Tbps. horseradish (to taste)

1/2 tsp. ground mustard

1 Tbsp. margarine

~ Mix flour with 1/4 cup water in a saucepan and stir until smooth.

~ Slowly add rest of water, stirring constantly to keep mixture smooth.

~ Add rest of ingredients and mix well. Heat over low flame, stirring constantly as mixture thickens.
